Oh babyyy~ You know, I’m not usually one to toot my own horn, but god damn these pancakes are good divine! I have been making pancakes so much lately on the weekends and experimenting a lot, that I now know what creates a really moist pancake… and that is the addition of sour cream. Sour cream is so amazing and versatile, I love adding it to batters where I want  to have just a little bit extra moisture without having to add extra fat. Sour cream is also one of my secret ingredients in my ultra soft scrambled eggs. Shh! Keep that a secret!

Italian Sausage Breakfast Waffles

Breakfast Sausage and Egg Waffles with Maple Syrup

Sorry, I’ve been pretty busy these past couple of days. I actually made this the morning after Halloween. Kevin and our roommate were hurtin’ pretty bad after their night out, so I decided to make them some hangover food to help them with the recovery process. I was initially thinking waffles, but I remember we had just bought some Italian sausage earlier (which was meant to be used for Scotch Eggs – a recipe soon to come). I mean, they do chicken and waffles, so sausage and waffles sounds pretty damn good to me. A little salty, a little sweet. The only way to make it better was to add egg to it, because egg makes everything better- AMIRIGHT?! 

This recipe is pretty basic, no techniques here. If a hungover guy can make waffles, I think anyone can make this dish. The only thing it requires is some multi-tasking, but I’ll get to that later.

Montreal Smoked Meat Hash

I have a confession to make… I’ve recently become addicted to my cast iron skillet. This is a big deal for me because I used to dislike using it. I wasn’t fond that it was heavy or that it came with a list of rules you had to follow in order to maintain it:seasoning it properly, not using soap when cleaning it (apparently not true according to my idol Kenji), or drying it thoroughly so it didn’t rust. However, recently my boyfriend (Kevin) reintroduced me to the world of cooking in a cast iron skillet and I love it now! Best of all it makes for good food pictures and it can be tossed in the oven without worry. I use it so much that I’m beginning to think I have a problem, but Kevin doesn’t seem to care as long as he is fed! Continue Reading
